I’ve been into “power” things lately.
Like coffee energy bites! And vegetables. Oh my darling vegetables.
I’ve never loved vegetables the way that some people do, but right now I’m in Super Mario power mode and am eating veggies at all times. It’s supremely accomplished of me.
Well, except for that my birthday was over the weekend and I stuffed myself into oblivion with fried Vietnamese food and gelato. And cookies at work. And the pre–dinner ice cream/cookies at home. But that’s like…birthday food. So it kind of counts as vegetables too.
There are so many components that make this salad THE best green salad out there. First, it’s got edamame. If we could just sprinkle salted edamame on all salads from now on, I think the world would be a happier place.
And we’d all eat way more salads.
Then, the dressing. It’s CREAMY, which is, in itself, huge. Texture matters. Especially the creamy kind. It’s also pretty and delicious. The avocado adds just the right amount of flavor.
And then, my must have for green salads (all salads?): cashews. I often choose cashews because they’re mild and wonderfully salty. I can’t think of a salad that wouldn’t be improved with a sprinkling of cashews.
Since this salad is all cute little pieces of everything, you actually get bites of both edamame and cashews in every forkful. The best.
